Carnitas or "little meats" is a popular Mexican dish that originated in the state of Michoacán. Carnitas are made by braising or simmering pork until tender. The process takes three to four hours, and the result is the most succulent meat you'll ever eat. In our family, carnitas is especially valued for the principle role it plays in Tortas Ahogadas, a salsa-drowned sandwich from Guadalajara. For a tasty dinner, add our carnitas to tacos, salads, or soups. In the morning, scramble with eggs for a delicious protein-forward breakfast.

COOKING INSTRUCTIONS

Baking
Take your frozen food out of the freezer and put it in the refrigerator to thaw. For a faster alternative, we recommend the Hot Water-Bath (Baño Maria) method: Use boiling tap water and immerse the plastic-wrapped meat in a large pot for about 15 minutes, stirring occasionally. Stirring is important because it prevents a cold zone from developing around the food, insulating it from the remaining warm water.
Preheat the oven at 400°F. Line a baking sheet with parchment paper or aluminum foil.
Bake for about 15 minutes or until the pork is slightly charred.

Grilling

Place the carnitas on a foil tray and heat them up on the Grill at medium-low for about 12-15 minutes or until the pork is slightly charred.
