Derived from Middle Eastern shawarma, Pastor is vertically-grilled meat that took root in Mexico in the 1960s. At Green Roots Meals, our Pork Al Pastor is marinated in onions, adobo salsa, and pineapple juice, then slowly cooked on a vertical rotisserie called a trompo. Try our Pastor in tacos and tortas or on homemade pizza.

COOKING INSTRUCTIONS

Baking
Take your frozen food out of the freezer and put it in the refrigerator to thaw. For a faster alternative, we recommend the Hot Water-Bath (Baño Maria) method: Use boiling tap water and immerse the plastic-wrapped meat in a large pot for about 15 minutes, stirring occasionally. Stirring is important because it prevents a cold zone from developing around the food, insulating it from the remaining warm water.

Preheat the oven at 400°F. Line a baking sheet with parchment paper or aluminum foil.
Bake for about 15 minutes or until the pork is slightly charred.

Grilling

Place the pastor on a foil tray and heat them up on the Grill at medium-low for about 12-15 minutes or until the pastor is slightly charred.

RECIPE IDEAS
Make tortas al pastor! Spread refried beans on the bottom of a roll, then add onion slices, avocado, cilantro, jalapeño, pastor, lettuce, sour cream. Put the top of the roll on the sandwich and enjoy!
